Full-Time | 40 Hours/Week
Zaman Bakery is looking for an experienced Baker / Pastry Production Baker to join our production team.
The 3:00 AM start time is a required part of this position. This role is responsible for starting our morning bake and ensuring our croissants and other products are properly proofed, baked, packaged, and ready for delivery to our stores.
What Your Morning Looks Like
You will arrive at 3:00 AM and take responsibility for the morning bake.
Your responsibilities will include:
- Check croissants coming out of the overnight retarder/proofer and determine when they are properly proofed and ready to bake
- Bake croissants and other morning products to Zaman’s quality standards
- Monitor products during baking and determine doneness based on color, structure, texture, and experience—not simply a timer
- Cool, package, label, and prepare finished products for pickup and delivery
- Bake sponge cakes and other pastry components
- Prepare creams, fillings, and other pastry components
- Support the pastry team with cake assembly, filling, decorating, finishing, and packaging
- Maintain an organized production area throughout the shift
- Properly clean and sanitize your workstation, equipment, tools, and production area before leaving
- Follow all food-safety, sanitation, allergen-handling, and health-code requirements
What We’re Looking For
Professional baking experience is required.
We need someone who understands that baking is not simply following a timer or written recipe.
A qualified baker should be able to look at and handle a croissant and recognize whether it needs more proofing time. You should be able to look at a product in the oven and recognize whether it needs another two minutes or is ready to come out. The same judgment should apply when baking sponge cakes and other pastry products.
Required:
- Previous professional bakery or pastry-production experience
- Experience baking croissants and/or laminated pastries
- Experience baking cakes, including sponge cakes
- Working knowledge of proofing, fermentation, and baking
- Ability to independently judge proofing and baking readiness
- Food-safety training/certification
- Understanding of commercial kitchen sanitation and food-safety procedures
- Ability to work efficiently and independently during the early-morning portion of the shift
- Reliable transportation and dependable attendance
- Ability to stand for the duration of the shift and perform normal bakery-production tasks

Pay: $18.00 – $24.00 per hour
