The Jordan Restaurant with Marthinus Ferreira located at Jordan Wine Estate in Stellenbosch, is a signature fine-dining restaurant owned and managed by highly acclaimed Chef Marthinus Ferreira.
We offer the opportunity to a highly skilled, passionate and committed individual to join our exceptional team as a Pastry Chef. The ideal candidate will bring a combination of culinary expertise, artistic flair, and meticulous attention to detail to craft high-quality desserts, pastries, and baked goods that elevate the overall dining experience. As a key member of the kitchen brigade, the Pastry Chef will be responsible for the creation, preparation, and presentation of all pastry items, while leading a team to maintain the highest culinary standards.
Key Responsibilities
Menu Development
Collaborate with the Head Chef to design and develop seasonal and innovative dessert menus that align with the restaurant’s culinary vision
Recipe Creation
Create, test, and refine recipes to ensure consistent quality, flavor, and presentation.
Ingredient Sourcing
Identify and source premium ingredients, ensuring freshness and superior quality in all pastry items.
Production
Oversee and participate in the preparation, baking, and decorating of desserts, pastries, and baked goods to meet daily service needs.
Presentation
Ensure that each dessert is artfully plated and aesthetically aligned with fine dining standards.
Team Management
Lead, train, and mentor pastry team members, fostering a collaborative and high-performance work environment.
Inventory Management
Monitor stock levels of pastry ingredients and supplies, manage ordering, and minimize waste.
Quality Control
Maintain exceptional standards of taste, texture, and consistency across all pastry products.
Hygiene and Safety
Uphold rigorous hygiene and sanitation practices and ensure compliance with food safety regulations at all times.
Requirements
Proven experience as a Pastry Chef in a fine dining or upscale restaurant setting
Culinary degree or formal pastry training preferred
Strong understanding of pastry techniques, ingredients, and flavor pairing
Exceptional artistic and presentation skills
Ability to manage a team and coordinate production in a fast-paced environment
Strong organizational and time-management skills
Commitment to excellence and innovation
Flexibility to work evenings, weekends, and holidays as required
Work Environment:
Fast-paced fine dining environment.
Requires evening, weekend, and holiday shifts.

Consideration:
Candidates, who are already residing in the Western Cape will have preference. We can only consider South African Citizens or applicants who hold a valid South African Permanent Residence. Applicants, who live in other provinces of South Africa still need to attend personal interviews and if requested to do any cook-offs, will do so completely at their own expense.
