Location: Bela Bela
Job Purpose:
To assist in the preparation and presentation of high-quality pastries, desserts, and baked goods, ensuring consistent excellence in line with the lodge’s 5-star standards. The Pastry CDP will support the Head Pastry Chef in delivering creative and seasonal pastry offerings, aligned with guest expectations and dietary requirements.
Key Responsibilities:
Prepare, bake, and present pastries, breads, desserts, and other baked goods to the highest standard.
Ensure mise en place is completed for all pastry sections in a timely manner.
Assist in the development of new dessert menus and seasonal pastry items.
Maintain cleanliness and hygiene in the pastry section in line with HACCP standards.
Ensure stock rotation and minimal wastage of pastry ingredients and supplies.
Assist with inventory control and placing pastry-related orders when required.
Accommodate special dietary needs (e.g., gluten-free, vegan, sugar-free).
Train and guide junior pastry staff and commis chefs as required.
Collaborate with other kitchen sections to ensure a smooth and cohesive food service.
Support in catering for high-end functions, bush dinners, and bespoke events.
Uphold the lodge’s sustainability and food philosophy.
Qualifications & Experience:
Diploma or Certificate in Patisserie, Culinary Arts, or related field.
Minimum 2–3 years experience as a Pastry CDP or Senior Commis in a luxury hotel, game lodge, or fine dining environment.
Strong knowledge of pastry techniques including chocolate work, sugar craft, plated desserts, and artisan breads.
Experience working in a 5-star property or Relais & Châteaux establishment is advantageous.
Valid driver’s license (preferred, not essential).

Ability to work calmly under pressure in a remote, high-demand environment.

Working Conditions:
Live-in position with accommodation and meals provided.
6 weeks on / 2 weeks off rotational schedule or similar, depending on lodge policy.
Remote bush setting – must be comfortable working in isolated, natural environments.
