Robinson Pub — Kitchen Staff- Line Cook / Prep Cook

Line Cook Position Summary
The Line Cook is responsible for preparing and cooking food to Robinson Pub standards while maintaining quality, consistency, cleanliness, food safety, and efficient ticket times. The Line Cook works as part of the kitchen team and may be assigned to multiple stations depending on business volume and staffing needs.

Primary Duties & Responsibilities

Food Preparation & Cooking

  • Prepare and cook menu items according to Robinson Pub recipes, specifications, and portion standards.
  • Set up and stock assigned station before service.
  • Cook food to proper temperatures and presentation standards.
  • Follow recipes and plating procedures consistently.
  • Maintain proper portion control to help control food costs.
  • Read and prioritize tickets accurately during service.
  • Work multiple stations as needed, including grill, flat-top, fryer, sauté, and expo.
  • Communicate with other kitchen staff to ensure orders are completed accurately and on time.
  • Assist with special events, tournaments, banquets, and high-volume service periods.

Food Safety & Sanitation

  • Follow all applicable North Carolina food safety and sanitation requirements.
  • Maintain proper food temperatures throughout preparation, cooking, holding, and service.
  • Prevent cross-contamination by properly handling raw and cooked foods.
  • Maintain a clean and organized workstation throughout the shift.
  • Properly label, date, rotate, and store food products.
  • Follow proper handwashing and personal hygiene procedures.
  • Clean and sanitize equipment, work surfaces, utensils, and kitchen areas.

Kitchen Operations

  • Check station inventory before and during service and communicate shortages to the Kitchen Manager.
  • Assist with receiving and storing deliveries when assigned.
  • Minimize food waste through proper preparation, portioning, and storage.
  • Properly operate kitchen equipment and report maintenance or safety issues.
  • Assist with opening and closing procedures.
  • Help maintain an organized walk-in cooler, freezer, dry storage, and kitchen.
  • Support other kitchen team members as needed.

Guest & Team Service

  • Maintain a professional, positive attitude during busy periods.
  • Work cooperatively with servers, bartenders, management, and other kitchen employees.
  • Respond appropriately to special requests and dietary concerns.
  • Understand that the kitchen’s goal is to provide guests with quality food, accurate orders, and a great overall experience.

Prep Cook

Position Summary
The Prep Cook is responsible for preparing ingredients and menu components for daily service while maintaining proper food safety, sanitation, organization, and quality standards. The Prep Cook plays an important role in keeping the Robinson Pub kitchen stocked and ready for service.

Primary Duties & Responsibilities

Food Preparation

  • Prepare vegetables, meats, sauces, dressings, soups, sides, and other ingredients according to established recipes and prep lists.
  • Follow standardized recipes and portion specifications.
  • Properly wash, cut, chop, slice, dice, portion, and prepare ingredients.
  • Prepare items needed for daily service and upcoming business periods.
  • Portion ingredients into appropriate containers for line service.
  • Prepare garnishes and other finishing ingredients.
  • Assist with preparation for tournaments, outings, special events, and large groups.

Food Safety

  • Follow all applicable food safety and sanitation requirements.
  • Maintain proper food temperatures.
  • Prevent cross-contamination during food preparation.
  • Properly label and date all prepared food.
  • Follow FIFO — First In, First Out — inventory procedures.
  • Store prepared foods correctly.
  • Maintain proper personal hygiene and handwashing procedures.

Kitchen Organization

  • Keep prep areas clean, organized, and properly stocked.
  • Maintain organization of walk-in coolers, freezers, and dry storage.
  • Monitor inventory levels and communicate low-stock items to management.
  • Assist with receiving and storing food deliveries.
  • Rotate products to minimize spoilage and waste.
  • Maintain clean cutting boards, knives, containers, equipment, and work surfaces.

Support of Kitchen Operations

  • Restock line stations before and during service.
  • Assist Line Cooks during high-volume periods when needed.
  • Help with dishwashing and general kitchen cleaning when necessary.
  • Assist with opening and closing duties.
  • Clean and sanitize equipment and prep areas.
  • Perform other kitchen duties as assigned by the Kitchen Manager.

Robinson Pub – Prep Cook Performance Standards

A successful Prep Cook should consistently:

  • Arrive on time and ready to work.
  • Remain productive during both busy and slow periods.

Cross Training – All kitchen employees are expected to be willing and able to perform duties outside their primary position when business needs require it. Employees may be asked to assist with prep, line cooking, dishwashing, cleaning, stocking, catering, tournaments, or other kitchen-related duties. Every member of the kitchen team is responsible for helping create a clean, efficient, professional, and guest-focused operation.

Pay: $18.00 – $25.00 per hour

Expected hours: 25.0 – 35.0 per week
