Head Bartender
This role forms part of the Food & Beverage team at Camps Bay Retreat, located in Camps Bay, Cape Town.
The Role
At Camps Bay Retreat, we believe every drink tells a story, and every interaction creates a lasting impression. As our Head Bartender, you will lead the bar team in delivering exceptional guest experiences through outstanding service, expert product knowledge and innovative beverage offerings.
You will take ownership of the day-to-day bar operations, ensuring service excellence, maintaining high presentation standards and inspiring your team to create memorable moments for every guest. From crafting signature cocktails to mentoring bartenders and managing stock, you will play a key role in delivering the Village n Life Pure Hosting experience.
Key Responsibilities
- Lead the daily operations of the bar, ensuring it is fully prepared and operational before each service.
- Supervise, motivate and support the bar team to consistently deliver exceptional guest experiences.
- Ensure all drinks are prepared and presented according to company recipes and quality standards.
- Create a welcoming atmosphere where guests feel recognised, valued and genuinely looked after.
- Develop and recommend seasonal cocktails, signature beverages and drink promotions.
- Maintain exceptional cleanliness, organisation and presentation of all bar areas.
- Ensure bar equipment is clean, maintained and operating efficiently.
- Prepare and monitor garnishes, cocktail stations, glassware, ice and beverage stock before service.
- Monitor stock levels, conduct stock rotation (FIFO), minimise wastage and report shortages.
- Assist with stock counts, ordering and inventory management.
- Ensure compliance with liquor legislation, responsible alcohol service and company policies.
- Handle guest requests, concerns and complaints professionally and efficiently.
- Coach, mentor and develop junior bartenders, promoting a culture of continuous improvement.
- Ensure POS systems are functioning correctly, and cash handling procedures are followed.
- Work closely with Restaurant Managers and Service Managers to ensure seamless service.
- Maintain accurate records of breakages, wastage and stock variances.
- Ensure health, safety and hygiene standards are consistently maintained.
- Complete all opening and closing procedures, including securing stock and completing cash-up processes.
What We’re Looking For
- Grade 12 (Hospitality qualification advantageous).
- Minimum of 2 years’ experience in a Head Bartender, Senior Bartender or similar supervisory role within a high-end restaurant, hotel or luxury hospitality environment.
- Sound knowledge of cocktail preparation, mixology, wines, spirits, beers and beverage trends.
- Experience with POS systems; Opera knowledge will be advantageous.
- Strong leadership skills with the ability to motivate and develop a team.
- Excellent guest engagement and communication skills.
- Strong organisational skills with exceptional attention to detail.
- Good understanding of stock control, inventory management and cost control.
- Ability to remain calm and perform under pressure in a fast-paced environment.
- Passion for hospitality and creating memorable guest experiences.
- Flexible and available to work shifts, weekends and public holidays within a seven-day operation.
