Ba-Phalaborwa Golf Club, on behalf of Indalo Hotels and Leisure is looking for a Commis Chef that will assist in the preparation and cooking of high-quality dishes in a fast-paced kitchen environment. As a Commis Chef, you will learn and develop cooking techniques, gain knowledge of kitchen operations, and work under the guidance of senior chefs to ensure the smooth operation of the kitchen.

Additionally, the Commis Chef will maintain the kitchen cleanliness, safety and compliance with health regulations.

DUTIES AND RESPONSIBILITIES

FINANCE:

Minimising food waste and control the use of chemicals.

Follow recipes as per recipe cards and kitchen menu SOP manual.

Participate in inventory counts.

Minimise waste due to poor cooking.

CUSTOMER:

Maintain high standards of customer service and hospitality.

Produce all menu items according to the recipe cards.

Ensure all menu items are produced to provide a quality culinary offering for all our customers.

Maintain a safe, clean and organised workplace.

PROCESSES:

Always follow all SOPs and Recipe Cards.

Attend handover meetings upon arrival for shift and then at shift change.

Conduct regular checks of Fridges, Freezers and storage areas to ensure food is stored safely and following LIFO rules.

Ensure compliance with health, safety, and hygiene regulations.

PEOPLE:

Ensure a high level of teamwork within the kitchen brigade.

Comply with grooming standards, hygiene practises, PPE, Company dress and uniform code.

Ensure you clock in upon arrival and clock out upon departure, of each shift.

Report on time for scheduled shifts and ensure optimal service levels are achieved during peak times.

QUALIFICATIONS

Minimum Experience

Minimum 1 years’ experience as a Commis Chef within twithin a single-standing restaurant or chain of restaurants, providing upmarket dining experiences.

Good understanding of food and Health and safety practises.

Good understanding of relevant computer programmes (MS Office, POS, Inventory Management)

Good understanding of Seafood and Healthy menu items.

Up to date with culinary trends.

Ideal Experience

Certificate in Culinary Arts (NQF Level 2) at a recognised and reputable institution.

Minimum

Grade 10.

Proven experience as a Commis or Sculler or similar role, preferably in a single-standing restaurant.

Must have a reputable, relevant and unbroken record of service.
