Protea Hotels by Marriott® in Rosebank is looking for a dedicated food preparation team member. The position involves preparing meals, ensuring food quality, and assisting in managing kitchen operations.
Candidates should have a technical, trade, or vocational school degree and at least three years of relevant experience in a culinary environment. The role requires strong communication skills and the ability to maintain quality standards.

A Chef de Partie (CDP) is responsible for managing a specific section of the kitchen and ensuring that all dishes are prepared to the required quality, consistency, and presentation standards. In a role focused on Precision Prep and Seasonal Menus, the Chef de Partie plays a key role in ingredient preparation, menu execution, and adapting dishes according to seasonal produce availability.

Key Responsibilities

  • Prepare and cook menu items according to established recipes and presentation standards.
  • Manage and oversee a designated kitchen section, ensuring efficient workflow and service delivery.
  • Execute precise preparation techniques, including portion control, knife skills, and ingredient handling.
  • Work closely with the Head Chef and Sous Chef in developing and implementing seasonal menu changes.
  • Ensure the use of fresh, seasonal ingredients to maximize quality and cost efficiency.
  • Monitor stock levels and assist with inventory control and ordering requirements.
  • Maintain high standards of food hygiene, safety, and sanitation in accordance with company policies and health regulations.
  • Train and support junior kitchen staff and commis chefs within the section.
  • Minimize food waste through effective planning, storage, and stock rotation practices.
  • Ensure consistency in food quality, taste, and presentation during service periods.

Minimum Requirements

  • Relevant culinary qualification or equivalent practical experience.
  • Previous experience working as a Chef de Partie or in a similar kitchen role.
  • Strong knowledge of food preparation techniques and cooking methods.
  • Excellent knife skills and attention to detail.
  • Understanding of seasonal ingredients and menu planning principles.
  • Knowledge of food safety and hygiene regulations.
  • Ability to work effectively under pressure in a fast-paced kitchen environment.
  • Strong communication and teamwork skills.
