Job Title: Blockman

Department: Production / Meat Processing Reports To: Production Manager / Factory Manager

Job Summary

The Blockman is a skilled and physically capable individual responsible for the precise cutting, preparation, and packaging of various pork products. This role requires expert knife skills, competent operation of specialised machinery, and adherence to strict hygiene and safety standards. The Blockman will play a key role in ensuring product quality and meeting customer specifications, with occasional duties in the main deboning factory.

Key Responsibilities

Meat Processing & Preparation:

Daily slicing of pork primal cuts into chops according to customer and company specifications.

Proficiently making various pork cuts and preparations, including but not limited to, rolled pork shoulder.

Slicing and packing bones as required by customer orders.

Ensuring all meat processing, cutting, and preparation meets high quality control standards.

Maintaining impeccable hygiene standards in the work area and with all equipment.

Equipment Operation:

Safe and competent operation of the bandsaw for various cutting tasks.

Safe and competent operation of the circular saw for meat and bone slicing.

Efficient and competent use of the sealing machine for product packaging.

From time to time, operating the circular saw in the main deboning factory, requiring dexterous manipulation of pig carcasses with the help of an assistant.

Packaging & Quality Control:

Accurate packing of all sliced and prepared products according to customer requirements.

Competently using the scale to weigh products, ensuring correct measurements.

Following cutting specifications that may include precise width and length dimensions.

Production Management & Numeracy:

Ability to control and manage production figures.

Understanding and adhering to cutting specifications and dimensional requirements.

Safety & Compliance:

Adhering to all company safety protocols and procedures, particularly when operating machinery.

Working collaboratively with team members, including assistants, to ensure efficient and safe operations.

Required Skills & Qualifications

Expert Knife Skills: Demonstrated proficiency in various meat-cutting techniques and preparations.

Machine Operation: Proven ability to safely and competently operate a bandsaw, circular saw, and sealing machine.

Numeracy: Basic mathematical skills for managing production figures, following specifications, and accurately weighing products.

Attention to Detail: Meticulous approach to quality control, hygiene, and meeting precise cutting and packing specifications.

Physical Fitness: Ability to perform physically demanding tasks, including lifting, standing for extended periods, and dexterously manipulating carcasses.

Safety Conscious: Strong commitment to workplace safety and adherence to all operational guidelines.

Teamwork: Ability to work effectively with colleagues and assistants.

Experience: Previous experience as a Blockman or in a similar meat processing role is highly desirable.

Physical Requirements

Ability to stand for long periods.

Capable of lifting and moving heavy meat products and carcasses.

Manual dexterity for precise cutting and machine operation.

Ability to work in a cold environment (typical of meat processing facilities).

Strong hand-eye coordination.

Education

Grade 10 to 12

National certificate in food processing or food safety will be an advantage
